Winemaking Process:
- Hand-harvested in the early morning for optimal freshness
- Whole-cluster pressed; cold-settled
- Initial fermentation in stainless steel tanks
- Transferred at 9 Brix to French oak barrels (20% new) to complete fermentation
- Aged on lees for 9 months with batonnage during the first four
